In our desire to create natural cuvées in our image, we decided to cross iron with a little Cabernet Sauvignon.

This Iron Cross on the sanguine and mineral side is tense & rustic in the acid balance. Still fruit, which makes the signature of Brau and a slight taste of iron which brings freshness in the mouth.

The small touch of Cabernet Sauvignon (10%) brings a little more tannins and this year by a manual harvest, in the early morning just at maturity we support a red fruit which assembled with the blood side brings a gustatory complexity to the wine and the times a very frank guideline in the mouth.

Without ever adding sulphite, the berries were de-stemmed, de-stemmed, numerous rackings, a few pumping-overs and a quick vatting.
