The secrets of making our Cypher Alcohol Free Wine
A warm welcome! Wine lovers and the curious! Have you ever wondered how we manage to make our delicious Cypher alcohol-free wine without losing a drop of flavour? Hang on, we’re going to let you in on our secrets… or almost!
So how do you remove the alcohol without taking away the pleasure? Simple: vacuum evaporation. No, not the way your grandfather used to do it with his still in the garden. We do it using state-of-the-art technology!
We start by heating our beloved wine. Alcohol is more volatile than water, so it evaporates more quickly. But wait, we’re not just doing this any old how: we’re using vacuum evaporation. Imagine boiling water on the moon. Under vacuum, the alcohol evaporates at a much lower temperature, around 40°C instead of the usual 78°C. This allows us to keep all those delicious aromas.
To ensure that our wine doesn’t lose any of its aromas along the way, we use a vacuum evaporation technique. The wine is spread out in thin layers on small metal elements arranged loosely in a column, rather like a wine lasagne (but without cheese, of course). This method allows the alcohol to evaporate gently, without damaging the wine’s aromas.
The evaporated alcohol is then collected in liquid form in a condenser. The de-alcoholised liquid is recovered by gravity and can be reworked to adjust its aromatic profile. Because we like to do things our own way.
Low temperature evaporation is our magic wand for guaranteeing a quality alcohol-free wine. By keeping the temperature low, we preserve all the aromatic structure of the wine, eliminating only the alcohol. We could even recover the aromas in the extracted alcohol, but that could leave traces of alcohol, and at Cypher we like it when it’s done well and without compromise.
